A deliciously spicy dish using Swedish meatballs and red onion.

Ingredients

  • 15ml (1tbsp) oil
  • 1 large red onion, sliced
  • 1 x 300g packet Swedish meatballs
  • 1 x 420g can red kidney beans in chilli sauce
  • 300ml (1/2pt) passata (sieved tomatoes)
  • Soured cream and chives, to garnish

Method

  1. Heat the oil in a frying pan and fry the red onion for 5 mins until softened. Add the meatballs and fry for 2-3 mins until browned all over.
  2. Stir in the kidney beans in chilli sauce and passata and bring to the boil. Reduce the heat, cover and simmer for 10 mins until the sauce has thickened and the meatballs are heated through. Garnish with soured cream and chives and serve immediately.
