One of the easiest, quickest salads around- with a dollop of crème fraiche, this dish is perfection!

  • Serves: 4

Ingredients

  • 500g new potatoes, scrubbed and halved
  • 1½ tbsp half fat crème fraiche
  • 1½ tbsp low fat mayonnaise
  • ½ red onion, finely chopped
  • ½ tsp lemon juice
  • 2 tbsp freshly chopped chives
  • Salt and pepper, to taste

Method

  1. Place the new potatoes in a pan of lightly salted boiling water. Cover and simmer for 15 minutes or until tender then drain and allow to cool.
  2. In a bowl mix together the remaining ingredients and carefully stir in the potatoes.
  3. Season to taste.
