Creamy new potato salad

One of the easiest, quickest salads around- with a dollop of crème fraiche, this dish is perfection!

Ingredients
- 500g new potatoes, scrubbed and halved
- 1½ tbsp half fat crème fraiche
- 1½ tbsp low fat mayonnaise
- ½ red onion, finely chopped
- ½ tsp lemon juice
- 2 tbsp freshly chopped chives
- Salt and pepper, to taste
Method
- Place the new potatoes in a pan of lightly salted boiling water. Cover and simmer for 15 minutes or until tender then drain and allow to cool.
- In a bowl mix together the remaining ingredients and carefully stir in the potatoes.
- Season to taste.
