Crushed new potato cakes with smoked salmon

This great recipe for two is easy to make and uses delicious, fresh Scottish smoked salmon.

Ingredients

  • 350g (12oz) new potatoes, scrubbed and halved
  • 100g (4oz) Scottish smoked salmon
  • 1tbsp olive oil
  • 3tbsp half fat crème fraiche
  • 2tbsp freshly chopped chives
  • Zest of 1/2 lemon
  • 1tbsp capers
  • Salt and black pepper

Method

  1. Place the new potatoes in a pan of lightly salted boiling water. Cover and simmer for 15 mins or until tender then drain and return to the pan.
  2. Using a potato masher, lightly crush the potatoes with the olive oil, 1tbsp crème fraiche, 1tbsp chives, lemon zest, capers and seasoning to taste.
  3. Divide the potato between 2 plates, top with the smoked salmon. Spoon the remaining crème fraiche on top and sprinkle over the remaining chives.
