Teriyaki pork skewers with fried rice

Teriyaki Pork Skewers with Rice

The sweet Japanese sauce is perfect with pork and fried rice- a brilliant family meal with a taste of the exotic.

Ingredients

  • 4 pork escalopes, each cut into three strips
  • 60ml (4tbsp) teriyaki sauce
  • 45ml (3tbsp) runny honey
  • 10ml (2tsp) sunflower oil
  • 5ml (1tsp) garlic puree
  • 2 x 250g pouches cooked rice
  • 300g pkt bean sprout and vegetable stir-fry

Method

  1. Thread the strips of pork on to 12 wooden skewers. Place on a grill rack and cook under a medium preheated grill for 4-5 mins, turning once. At the same time, warm the teriyaki sauce and honey in a small pan and boil for 2-3 mins until syrupy.
  2. Brush half the teriyaki mixture over the pork skewers and cook for a further 3-4 mins, turning once or twice, until cooked through.
  3. Heat the oil in a large wok and add the garlic puree, rice and stir-fry vegetables plus 30ml (2tbsp) water. Stir-fry over a high heat for 3-4 mins until piping hot. Serve with the pork skewers and remaining teriyaki and honey mixture.
