Warm Falafel and Goat's Cheese Salad

This vegetarian falafel is brilliant for a quick family meal- light, healthy and above all delicious!

Ingredients

  • 2 x 200g packets organic falafel
  • Half a small iceberg lettuce
  • 150g bag mixed salad leaves
  • 210g tub roasted pepper antipasti, drained
  • 150g (5oz) goats' cheese, roughly crumbled
  • 120ml (8tbsp) French dressing, warmed

Method

  1. Preheat the oven to 190°C, 375°F, Gas 5. Arrange the falafel on a baking sheet and heat
  2. in the oven for 10-12 mins, turning once.
  3. Meanwhile, wash and tear the iceberg lettuce into pieces and toss with the bag of salad leaves. Arrange on four plates with the roasted peppers.
  4. Halve the hot falafel and add to each plate of salad, then top with goats' cheese. Pour over the warm salad dressing. Serve immediately.
