Warm falafel and goats' cheese salad

This vegetarian falafel is brilliant for a quick family meal- light, healthy and above all delicious!

Ingredients
- 2 x 200g packets organic falafel
- Half a small iceberg lettuce
- 150g bag mixed salad leaves
- 210g tub roasted pepper antipasti, drained
- 150g (5oz) goats' cheese, roughly crumbled
- 120ml (8tbsp) French dressing, warmed
Method
- Preheat the oven to 190°C, 375°F, Gas 5. Arrange the falafel on a baking sheet and heat
- in the oven for 10-12 mins, turning once.
- Meanwhile, wash and tear the iceberg lettuce into pieces and toss with the bag of salad leaves. Arrange on four plates with the roasted peppers.
- Halve the hot falafel and add to each plate of salad, then top with goats' cheese. Pour over the warm salad dressing. Serve immediately.
