Cheesy beef burgers
Big on flavour and so much healthier than a takeaway burger, always go for the leanest beef you can find

Ingredients
Use sun-dried tomato paste to add flavour to the burgers; it's richer and less acidic than regular tomato purée, delicious in pasta sauces, soups and casseroles, too
- 1 red onion, finely chopped500g (18oz) extra lean beef mince
- 2tbsp sun-dried tomato paste
- 4tbsp chopped parsley
- 1 garlic clove, crushed
- 75g (3oz) Cheddar, cut into four thin chunks
To serve:
- 4 large wholemeal baps
- 1/2 small red onion, sliced
- 3tbsp mayonnaise
Method
- Place the onion in a large bowl with all the remaining ingredients, except the cheese. Season with plenty of salt and freshly ground black pepper and stir until well combined, it's a lot easier to use your hands to squidge all the ingredients together.
- Shape the mix into 4 fat burgers and push a chunk of cheese into the centre of each one, make sure the cheese is covered.
- Preheat grill to medium and cook for 15 mins, turning now and then until cooked through. Put the burgers in toasted baps and top with red onion and mayo. Serve with salad and potato wedges.
