Balsamic grilled lamb with olive salsa

The slightly sweet flavour of balsamic vinegar gives tender lamb a little something extra.

Ingredients
Serve with the olive salsa, potatoes and a selection of veggies.
- 4 x 125g (4 1/2oz) thick lamb chump steaks
- 3tbsp balsamic vinegar
- 2 garlic cloves, thinly sliced
- 150g (5oz) mixed olives, chopped
- 170g pot fresh salsa
Method
- Place the lamb steaks in a non-metallic bowl, drizzle over the balsamic vinegar, add the garlic and season well. Leave to marinate for about 15 mins.
- Meanwhile, stir the olives into the salsa and set to one side.
- Preheat a griddle pan until very hot and add the lamb, cooking
- for 2-3 mins on each side for medium, or 3-4 mins for well done.
