The slightly sweet flavour of balsamic vinegar gives tender lamb a little something extra.

Ingredients

Serve with the olive salsa, potatoes and a selection of veggies.

  • 4 x 125g (4 1/2oz) thick lamb chump steaks
  • 3tbsp balsamic vinegar
  • 2 garlic cloves, thinly sliced
  • 150g (5oz) mixed olives, chopped
  • 170g pot fresh salsa

Method

  1. Place the lamb steaks in a non-metallic bowl, drizzle over the balsamic vinegar, add the garlic and season well. Leave to marinate for about 15 mins.
  2. Meanwhile, stir the olives into the salsa and set to one side.
  3. Preheat a griddle pan until very hot and add the lamb, cooking
  4. for 2-3 mins on each side for medium, or 3-4 mins for well done.
