This tasty stuffing takes just 10 minutes to prepare and then can be left to cook for an hour. If you've got the whole family round for a roast and are going to have lots to do, then why not make the mix up the night before.

Ingredients

Make this up the night before so it's ready to roast the next day

  • 1tbsp sunflower oil
  • 1 red onion, roughly chopped
  • 400g (14oz) good-quality pork sausagemeat
  • 200g (7oz) chopped butternut squash flesh
  • 2tbsp chopped fresh sage

Method

  1. Preheat oven to 200°C/400°F/gas 6.
  2. Heat the oil in a medium pan, add the onion, cover and cook for 10 mins. Remove the lid and cook for a further 5 mins until golden.
  3. Allow to cool before stirring in the sausagemeat, butternut squash and sage. Season well with black pepper, then pack into a 450g loaf tin. Bake for 45 mins, slice and serve.
