4 skinless, boneless chicken breasts
1 bunch spring onions, finely sliced
3tbsp sweet chilli sauce
2 garlic cloves, crushed
2tsp cumin seeds, lightly crushed
juice of 1/2 lime
1. Place the sweet chilli sauce in a large non-metallic bowl and add the garlic, cumin, lime juice and half the spring onion.
2. Slash the chicken breasts and add to the mixture. Combine well to coat. If you've got time, chill the chicken for half an hour or so to marinate.
3. Preheat the grill to medium and line the pan with foil. Grill the chicken for 15 mins, turning occasionally until cooked through and lightly charred.
