Chilled tomato and rocket pesto soup

Home-made tomato soup, simple and sensational.

    preparation, plus overnight marinating
  • Serves: 6

Ingredients

  • 1kg (2 1/4lb) ripe tomatoes, roughly chopped
  • 1 green pepper, deseeded and roughly chopped
  • 1 onion, chopped
  • 2 cloves garlic, crushed
  • 3 tbsp wild rocket pesto
  • salt and freshly ground pepper

Method

  1. First place the tomatoes, green pepper, onion and garlic in a large bowl. Add 2 tbsp of pesto and mix thoroughly.
  2. Then leave to marinate overnight, or for at least 8 hours, to let the flavours combine and deepen.
  3. The next day place the tomato mix into a processor and process until smooth and season with salt and pepper.
  4. Finally serve in bowls and drizzle with the remaining pesto.
