Easy Coronation chicken

This Anglo-Indian classic is fantastic as sandwich filler, or on its own as a light dinner.

Ingredients
- 4 chicken breasts, cooked
- 4tbsp mayonnaise
- 400g (14oz) tinned apricots
- 1tsp curry powder
- 8 spring onions, finely sliced
- Handful raisins
Method
- Drain the apricots then liquidise until smooth or pass through a sieve.
- Chop the chicken breasts into bite sized chunks and place in a large mixing bowl together with the remaining ingredients. Mix well until thoroughly blended.
- Cover and refrigerate until ready to serve. Serve in sandwiches or as cold dish at a buffet with rice salad and green salad leaves.
