Easy Coronation chicken

This Anglo-Indian classic is fantastic as sandwich filler, or on its own as a light dinner.

Ingredients

  • 4 chicken breasts, cooked
  • 4tbsp mayonnaise
  • 400g (14oz) tinned apricots
  • 1tsp curry powder
  • 8 spring onions, finely sliced
  • Handful raisins

Method

  1. Drain the apricots then liquidise until smooth or pass through a sieve.
  2. Chop the chicken breasts into bite sized chunks and place in a large mixing bowl together with the remaining ingredients. Mix well until thoroughly blended.
  3. Cover and refrigerate until ready to serve. Serve in sandwiches or as cold dish at a buffet with rice salad and green salad leaves.
