Ingredients
- 400g good-quality sausages
- 2tbsp olive oil
- 2 small red onions, cut into wedges
- 1 large red pepper, cut into thick chunks
- 2 courgettes, thickly sliced
- 4 garlic cloves, sliced
- 1-2tbsp chopped fresh rosemary
- 500g jar good-quality tomato pasta sauce
- 410g can cannellini beans, drained
- garlic bread, to serve
Method
- Grill the sausages until golden and cooked through. Slice and set to one side. Meanwhile, heat the oil in a large, non-stick frying pan, add the onions, pepper and courgettes, and fry over a medium-high heat for 5mins until softened and lightly charred.
- Reduce the heat, add the garlic and rosemary, and cook for 2-3 mins. Stir in the pasta sauce and beans, bring to the boil and simmer for 10 mins. Stir in the sausages and cook for a further 5mins. Serve spooned over hot garlic bread.
