Lamb Bangers with Sweet Potato Mash

Spicy lamb sausages with juicy balsamic onions and sweet potato mash. This is a great, quick recipe if you haven't got time to make everything from scratch.

Ingredients

For tasty mash alternatives, try adding 1tbsp chopped fresh rosemary to the butter, or mash up boiled carrots and parsnips with a little chopped fresh mint.

  • 500g sweet potatoes, peeled and cut into even-sized chunks
  • 300g floury potatoes, peeled and cut into even-sized chunks.
  • 1/4 tsp ground cumin
  • 50g butter
  • 1tbsp olive oil
  • 8 Asda Extra Special Lamb, redcurrant and rosemary sausages
  • 310g jar Belazu Borettane onions in balsamic vinegar (Sainsbury's, Tesco and Waitrose)
  • 1 tbsp redcurrant jelly.

Method

  1. Place the sweet potatoes and floury potatoes in a large saucepan and cover with water. Bring to the boil and simmer, covered, for 15-20 mins, until fully cooked and tender. Drain and return to the pan. Mash the potatoes and stir in the ground cumin and butter until smooth. Season with salt and freshly ground black pepper and keep warm.
  2. Meanwhile, heat the oil in a large frying pan over a medium heat, and cook the sausages for 5 mins on each side. Add the Belazu onions with their balsamic liquor and bring to the boil. Lower the heat and simmer for 5 mins until the sausages are cooked and the sauce reduced. Stir in the redcurrant jelly and season to taste. Serve with the sweet potato mash and some blanched spinach.
