Kit Kat crunch cheesecake has a Kit Kat base and is topped with a really light mascarpone and double cream mixture on top which we love! This cheesecake mixes the best of both worlds - naughty, indulgent chocolate bars with delicate mascarpone and citrus cream to make something that everyone will love! This recipe couldn't be easier to make - it'll take you no longer than 15 minutes to put all the ingredients together, you just need to make sure you're patient and leave it to set in the fridge. It might be best to make this recipe the night before so you're not tempted to go for it until it's ready to go.

Ingredients

  • 6 x 4-finger Kit Kat's
  • 25g butter, melted
  • 500g tub mascarpone cheese
  • 200ml whipped double cream
  • Juice of 1 lime
  • Zest of 2 limes
  • 50g sugar
  • 20cm springform cake tin

Method

  1. Smash 6 x 4-finger kit kat's and mix with 25g melted butter. Use to line 20cm springform cake tin and place in fridge to chill.
  2. Mix together a 500g tub mascarpone cheese with 200ml whipped double cream, juice of 1 lime, zest of 2 limes and 50g sugar. Spoon over base and chill for 30mins until set.
