Asparagus and Prosciutto Wraps

Asparagus is one of the healthiest veg around, and along with high protein walnut, these wraps are guaranteed to boost your well-being and energy.

Ingredients

  • 500g frozen puff pastry, thawed
  • 250g asparagus bundle
  • 6 slices of Parma ham (or any dry cured ham)
  • 50g walnut pieces, roughly chopped
  • Olive oil
  • Beaten egg to glaze

Method

  1. Preheat oven to 220°C/425°F/gas7.
  2. Roll out pastry to a rectangle approx 42cm x 28cm. Trim edges then cut out into 6 equal squares (each will be approx 14cm x 14cm). Place pastry on lined baking sheet.
  3. Trim or snap off the hardened ends of the asparagus. Divide asparagus into groups of 3 with spears side by side. Wrap each group with one slice of ham, starting just below the tips and work down in a spiral.
  4. Brush pastry squares with beaten egg. Lay one ham and asparagus bundle diagonally across each square corner to corner. Sprinkle lightly with a few chopped walnuts.
  5. Fold in side corners to form a wrap around the asparagus and ham. Brush top pastry with beaten egg and sprinkle with more walnuts.
  6. Bake for 15-18 minutes until pastry is risen and golden brown.
