Baked alaska is a classic, warming winter dessert. Using digestive biscuits saves you money and adds a lovely crunch too.

Ingredients

  • 3 Egg whites
  • 150g caster sugar
  • 4 digestive biscuits
  • Raspberry jam
  • Vanilla ice cream

Method

  1. Preheat the oven to Mark 7, 220°C, 425°F. Whisk 3 egg whites until stiff. Gradually add 150g caster sugar and whisk until thick and glossy.
  2. Lay 4 digestive biscuits on a lined baking tray. Spread each biscuit with 1/2 tbsp raspberry jam, then top with a scoop of ice cream.
  3. Fill a piping bag with meringue and pipe it over the ice cream - make sure there are no gaps.
  4. Bake for 3-4 mins, or until the meringue is a light golden brown.
