Apple and apricot crumble

This comforting crumble uses plenty of fruit to contribute to your 5-a-day target. It's lower in calories and fat than most traditional recipes, as it has less topping and less added sugar.

Ingredients

  • 2 medium cooking apples (400g /16oz), peeled, cored and sliced
  • 75g (3oz) dried apricots, chopped
  • 2tbsp water
  • Juice of 1/2 a lemon
  • 2tbsp maple syrup
  • 50g/2oz butter or sunflower margarine
  • 25g/2oz wholemeal flour
  • 50g/2oz large rolled oats
  • 50g/2oz medium rolled oats
  • 50g/2oz demerara sugar
  • 1/2 tsp cinnamon

Method

  1. Preheat the oven to 190°C/375°F/gas 5
  2. Put the apples and apricots in an ovenproof dish with the water, lemon juice and half the maple syrup and put in the oven for around 10 mins, until the apples are partly cooked.
  3. Meanwhile put the butter, wholemeal flour, rolled oats, cinnamon and soft brown sugar in a bowl and rub together to form a rough crumb mixture.
  4. Sprinkle the crumble mixture over the partially cooked apples, drizzle the remainder of the maple syrup over the top and return to the oven for a further 15-20 mins until the top is golden.
