Mediterranean wholemeal pizza

This fantastic homemade pizza brings the taste of Naples to your table- and at much lower cost than a takeaway!

Ingredients

  • Dough
  • 1/2tbsp dried yeast
  • Pinch salt
  • Pinch of golden caster sugar
  • 200g (7oz) very strong wholemeal flour
  • Drizzle olive oil, plus extra for greasing
  • 150ml (1/4pt) lukewarm water
  • 5tbsp pizza topping
  • 6 slices salami or pepperoni
  • 125g (4 1/2oz) mozzarella cheese
  • 50g (2oz) sun-blushed tomatoes
  • Small handful fresh basil leaves

Method

  1. To make the pizza dough, place the yeast, salt, sugar and flour in a large bowl and mix together well.
  2. Mix the olive oil with the water in a jug, then gradually add to the dry ingredients, beating and mixing all the time to create a thick dough.
  3. Knead for about 10 mins with floured hands, until the mixture is smooth and elastic.
  4. Place the dough in a lightly greased bowl. Cover with a tea towel and place in a warm place for about 30 mins.
  5. Gently punch the dough back into the bowl, and leave to prove for another 30 mins.
  6. Preheat the oven to 220°C/425°F/gas 7.
  7. Roll out the pizza dough onto a clean, floured surface to about 1/2cm thick. Place on a baking sheet.
  8. Spoon the pizza topping onto the pizza dough. Top with the meats, mozzarella and tomatoes. Bake for 20 mins or until the cheese is melted. Serve with a sprinkling of basil leaves.
