Ingredients

This tangy salsa also goes well with grilled or barbecued fish or roast pork. You can make it a day in advance and chill until required. For a fiery flavour, add a dash of Tabasco sauce or 5ml (1tsp) finely chopped red chilli pepper.

  • 200g can pineapple rings in juice1/2 red pepper, finely diced
  • 4 spring onions, trimmed and finely chopped
  • 30ml (2tbsp) fresh chopped coriander
  • 10ml (2tsp) white wine vinegar
  • 4 gammon steaks
  • 10ml (2tsp) honey
  • 5ml (1tsp) smooth mustard

Method

  1. To make the salsa, drain the pineapple rings, reserving 30ml (2tbsp) of the juice. Finely chop the pineapple and place in a bowl with the reserved juice, red pepper, spring onions, coriander and vinegar. Season with salt and freshly ground black pepper.
  2. Snip the rind of each gammon steak with scissors. Cook under a medium-hot grill for 4-5 mins on each side until just cooked. Mix together the honey and mustard and brush over the steaks. Cook for a further 1-2 mins, then serve topped with the pineapple salsa.
