A quick and easy take on an Anglo-Indian classic, this chicken tikka dish is quick to make and cheaper than a takeaway.

Ingredients

  • 225g (8oz) easy-cook basmati rice
  • 350g (12oz) frozen mixed country vegetables
  • 30ml (2tbsp) oil
  • 1 onion, thinly sliced
  • 210g packet chicken tikka chunks, sliced

Method

  1. Cook the rice in a large pan of lightly salted boiling water for 10-12 mins until just cooked. Drain and rinse under cold running water. Blanch the frozen vegetables in boiling water for 2 mins, then drain well.
  2. Meanwhile, heat the oil in a large frying pan and fry the onion for 8-10 mins until golden. Add the rice and vegetables to the pan and stir-fry over a high heat for 5-6 mins. Stir in the chicken tikka slices and cook for a further 2-3 mins until piping hot. Serve immediately with natural yogurt.
