Kids' flower cookies

This is such a simple recipe and a great one to start your kids off with cooking. They'll need a cookie cutter to make pretty shapes.

Ingredients
- 100g (4oz) unsalted butter
- 50g (2oz) caster sugar
- 100g (4oz) plain flour
- 2.5ml (1/2tsp) ground mixed spice
- 75g (3oz) sifted icing sugar
- Sugar flowers
Method
- Preheat the oven to 180°C (350°F, gas mark 4).
- Place the softened unsalted butter in a bowl with the caster sugar and beat until pale and creamy.
- Sift over the plain flour and ground mixed spice and mix to a stiff dough.
- Knead the dough on a lightly floured surface until smooth then wrap in clingfilm and chill in the fridge for 30 mins.
- Roll out the dough on a lightly floured surface and, using a flower-shaped stamp, cut out about 18 shapes, re-rolling the dough as necessary.
- Place on a large greased baking sheet and bake for 12-15 mins until pale golden. Cool for 2-3 mins then transfer to a cooling rack to cool completely.
- Make a thin glacé icing by blending sifted icing sugar with 15-30ml (1-2tbsp) warm water. Spoon the icing over the cookies and place a sugar flower in the centre of each cookie. Leave to set.
