Soda bread is a nice and light alternative to standard bread and is popular in Ireland.

Ingredients

  • 170g self-raising wholemeal flour
  • 170g plain flour
  • 1/2tsp salt
  • 1/2tsp bicarbonate of soda
  • 290ml buttermilk

Method

  1. Preheat the oven to 400°F/200°C/Gas 6.
  2. Place the flours, salt and bicarbonate of soda into a large mixing bowl and stir.
  3. Make a well in the centre and pour in the buttermilk. Mix with a large fork to form a soft dough.
  4. Turn onto a lightly floured surface and knead briefly.
  5. Shape into a round and flatten the dough slightly before placing on a lightly floured baking sheet.
  6. Cut a cross on the top and bake for about 30 mins or until the loaf sounds hollow when tapped. Cool on a wire rack.

Guideline Daily Amount for 2,000 calories per day are: 70g fat, 20g saturated fat, 90g sugar, 6g salt.

    For those you don't, or can't, use dairy products in recipes, is it possible to make, for instance, Soda Bread, with something in place of the Buttermilk?
