A perfect autumnal dessert, rich in ripe berry flavours and sweet maple syrup.

Ingredients

  • 4 medium-size cooking apples
  • 200g (8oz) chopped pecan nuts
  • 100g (4oz) Demerara sugar
  • 25g (1oz) butter
  • 300ml (10 fl oz) apple juice
  • Maple syrup to drizzle
  • 45ml (3tbsp) caster sugar
  • 100g (4oz) blackberries

Method

  1. Preheat the oven to 180°C/350°F/gas 4. Remove the cores from the apples and score a thin line around the circumference of each apple.
  2. Stand the apples in a baking dish and fill with the pecan nuts and some demerara sugar. Dot with butter and drizzle with maple syrup.
  3. Pour the apple juice around the apples, cover and bake for 40-50 mins until the apples are tender. 4.Meanwhile, place 150ml (5 fl oz) water in a small pan with the caster sugar and the blackberries. Simmer for 10 mins until syrupy. Pour the blackberry sauce over the baked apples and serve.
