Chocolate sponge, thick chocolate fudge icing - it's hard to resist this delicious cake. Come and have a go if you think you're brave enough!

Ingredients

  • 15ml (1tbsp) lemon juice
  • 250ml (9fl oz) milk
  • 2 large eggs
  • 100g (4oz) unsalted butter
  • 225g (8oz) caster sugar
  • 275g (10oz) self-raising flour
  • 5ml (1tsp) bicarbonate of soda
  • 30ml (2tbsp) cocoa powder
  • 100g (4oz) plain chocolate, melted
  • 450g tub chocolate fudge icing (such as Betty Crocker)
  • Chocolate curls (see Tip)

Method

  1. Preheat oven to Gas 3/170°C/325°F. Grease and line the base and sides of a 20cm (8in) round, deep cake tin. Add the lemon juice to the milk and leave for 20 mins (it will curdle a little).
  2. Place the eggs, butter, sugar, flour, bicarbonate of soda and cocoa powder in a large bowl. Pour in the milk. Beat with an electric whisk until smooth. Add the melted chocolate and beat until thoroughly combined.
  3. Spoon into the tin and level the surface. Bake for around 1 hr 20 mins, until the cake has risen and a skewer inserted into the centre comes out cleanly. Cool in the tin.
  4. Slice the cold cake horizontally into 3 equal rounds. Warm one-third of the chocolate icing until just runny. Spread the warm icing over 2 of the sponge rounds and sandwich all 3 rounds together.
  5. Spread the rest of the icing over the top and sides of the cake. Pile the chocolate curls on top of the cake.

    i have made a number of these cakes and i think there great!! i would recomend this chocolate cake to every1 instead of cream i used jam! it tasted brilll!!!!

    Great recipe, I made 3 for a party and they all came out perfectly. Only thing I changed was to add an extra egg, because the mix felt quite heavy and I wasn't sure it would rise properly, in the end I think it probably would have done though.
