If you love apricots, why not try this recipe for a delicious apricot tart? You'll be surprised at how just how easy it is.


  • Ready-rolled puff pastry
  • 25g butter
  • 25g caster sugar
  • 1 egg
  • 25g ground almonds
  • 1tsp plain flour
  • 4 apricots


  1. Cut out a 20cm round from a sheet of ready-rolled puff pastry and put it on a baking tray.
  2. Beat together the butter, caster sugar, 1 egg yolk, almonds and flour. Spread on the pastry, leaving a 2cm border.
  3. Halve and stone 4 apricots, arrange on top and bake at 200C (180C fan, gas mark 6) for 15-20 mins. Serve warm and enjoy.
