An old favourite, this recipe uses standard dark chocolate for that extra rich taste. Serve in coffee cups if you're looking to impress!

Ingredients

  • 200g bar Dark Chocolate
  • 2tbsp Tia Maria or Kahlua
  • 3tbsp black coffee
  • 3 large eggs, separated
  • 2tbsp caster sugar
  • Cocoa or dark or white chocolate shavings, to serve (optional)

Method

  1. Put the chocolate, liqueur and coffee in a bowl and stand over a pan of simmering water until melted and smooth. Remove the bowl from the pan and leave to cool for 5 minutes. Meanwhile, whisk the egg yolks with the sugar until light and creamy. Stir in the chocolate mixture.
  2. Whisk the egg whites until stiff but not dry. Fold into the chocolate mix with a large metal spoon, taking care not to knock out all the air. Divide between 4 glasses. Chill for at least 2 hours.
  3. Serve dusted with cocoa or sprinkle on a few chocolate shavings if desired.
  4. (Please note: pregnant women should avoid eating raw egg yolks.)
