So simple and tasty, this way of serving potatoes is great with herby lamb

Ingredients

  • 350g new potatoes
  • 1tbsp chopped fresh mint
  • 1tbsp snipped fresh chives
  • 2tbsp olive oil

Method

  1. Boil the potatoes in their skins until tender. Drain and crush with a fork in the pan.
  2. Mix in the herbs and olive oil and season well.
