Why not have a go at making this good old British favourite with a summer twist. Coronation chicken is great as a sandwich filler or on its own with salad leaves

Ingredients

  • 1 pack ready to eat half roast chicken or 2 cooked chicken breasts
  • 100ml chilli mayonnaise
  • 1 ripe mango, peeled and sliced
  • half a cucumber, cut into 1cm chunks
  • 4 spring onions, trimmed and sliced
  • 2tbsp flaked almonds, toasted

Method

  1. Discard the chicken skin and cut the meat into small pieces. Mix with the mayonnaise.
  2. Stir in the mango, cucumber, spring onions and flaked almonds, then serve.
