Ham and cheese soufflé omelette
This posh omelette uses the soufflé mixing method to make it light and airy without losing any of the flavour. It is simple to make and tastes great

Ingredients
- 2 medium eggs
- 2 slices thin sliced ham, cut into strips
- Knob of butter
- 50g mature white Cheddar, grated, plus a little extra to garnish
Method
- Crack the eggs and carefully separate them, putting the yolks in one bowl and the whites in another one.
- Beat the yolks with some salt and pepper and stir in the ham. Whisk the whites until stiff, then fold into the yolk mixture.
- Heat the butter in a frying pan and pour in the omelette mixture. Cook over a medium heat for 2 to 3 mins.
- Sprinkle over the cheese, then put the omelette under a preheated grill and cook for 3 to 4 mins, until the cheese is golden and bubbling. Fold over the omelette and slide onto a plate. Sprinkle with the remaining cheese and serve with salad leaves.
