If chicken is the only thing on the menu in your house try this French inspired dish to make poultry more exciting

Ingredients

  • 4 skinless chicken breasts
  • 100g (3 1/2oz) cream cheese with garlic and herb
  • 8 rashers reduced salt unsmoked back bacon
  • 450g (16oz) new potatoes, scrubbed
  • 3tbsp oil
  • 250g (9oz) pack green beans, trimmed

Method

  1. Preheat the oven to 180°C/355°F/gas 4. Cut a slit lengthways in each chicken breast. Divide the cream cheese between the pockets, pushing it right into the meat. Wrap each chicken breast in two rashers of bacon, taking care not to overlap the rashers, and put in a roasting tin.
  2. Cut potatoes into chunks and scatter around the chicken. Drizzle with oil and roast for 25 mins.
  3. Add the beans to the roasting tin and cook for another 5 mins, until the chicken is cooked.
