Fruity Quorn curry

This veggie curry is a great combination between sweet and sour. The madras paste has a real kick to it but the sweetness of the coconut and apricots provides a tasty balance.

Ingredients

  • 1tbsp olive oil
  • 1 small onion, cut into wedges
  • 1/2 175g (6oz) pack Quorn pieces
  • 1tbsp Madras curry paste
  • 50g (2oz) dried apricots, halved
  • 2tsp desiccated coconut
  • Fresh coriander, to garnish

Method

  1. Heat the oil in a frying pan and add the onion. Fry for 4 to 5 mins, until starting to turn golden. Add the Quorn and cook for 2 to 3 mins, stirring occasionally, then stir in the curry paste and 300ml boiling water.
  2. Stir in the apricots and season with salt and pepper. Simmer gently for 15 to 20 mins. Sprinkle over the coconut, garnish with the coriander and serve with rice and warm pitta bread.
