Lemon and Courgette Pasta Slim Fast

The subtle taste of courgettes is given a kick by adding chilli, garlic and tangy lemon. Served with wholewheat pasta and a crisp green salad, it's great whether you're watching your waistline or just want a simple, delicious meal that's good for you too.

Ingredients

  • 40g (1 1/2oz) vegetable fat spread
  • 4 cloves garlic, chopped
  • 1 green chilli, chopped, optional
  • 900g (2 lb) courgettes, grated
  • Zest and juice of 1 lemon
  • 15g (1/2oz) pinenuts
  • 350g (12 oz) wholewheat pasta
  • 40g (1 1/2oz) parmesan cheese, grated (use parmesan made with non-animal rennet for veggies)
  • Black pepper

Method

  1. Heat the spread and add the garlic, chilli and courgettes. Cook gently for 12-15 mins.
  2. Meanwhile cook the pasta according to packet directions.
  3. Drain the pasta and mix with the courgettes, the cheese and black pepper.
  4. Serve immediately with a crispy salad.

Guideline Daily Amount for 2,000 calories per day are: 70g fat, 20g saturated fat, 90g sugar, 6g salt.
