This sweet pancake is a great alternative to lemon and sugar and makes a great low-fat dessert too.

Ingredients

Ingredients:

  • 500g dessert apples
  • 50g caster sugar
  • 100g blackberries
  • ice cream
  • sugar, to serve

Method

  1. Peel, core and slice all the apples and place in a medium pan with 15ml water and 50g caster sugar.
  2. Cover, bring to the boil and simmer for 5 mins, stirring occasionally, until the apples are almost tender.
  3. Stir well then stir in the blackberries. Cover and simmer for a further 3 mins.
  4. Taste the mixture and add more sugar to your taste. Leave to cool slightly.
  5. Divide the mixture between 4-6 pancakes and serve hot with ice cream and a sprinkling of sugar.
