Ingredients

  • 500 g (1lb) baby carrots1tbsp (15ml) olive oil margarine2tbsp honey
  • 2tbsp finely chopped parsley
  • The honey in this dish brings out the natural sweetness of the carrots, making it a great vegetable side to serve at dinner parties.

Method

  1. Steam or boil the carrots in a small amount of water for about 10 mins or until they are tender-crisp. Drain.
  2. Meanwhile, melt the margarine in a pan over a medium heat. Add the honey and carrots, reduce the heat and turn the carrots frequently for 1-2 mins until they are well-glazed. Sprinkle with parsley.
