In this recipe the plums are poached in a honey and cinnamon syrup to give you a dessert that's delicious, easy and healthy.

  • Serves: 4

Ingredients

You can ripen plums by putting them in a paper bag, closing it loosely, and leaving it on the worktop for a few days. Once the fruit is ripe, it should be stored in the refrigerator for up to three days.

  • 300ml (1/2pt) water125g (4fl oz) honey1 cinnamon stick
  • 450g (1lb) plums

Method

  1. Place the water, honey and cinnamon stick in a large saucepan and bring slowly to the boil. Stir initially to ensure the honey has dissolved.
  2. Halve the plums and remove the stones. Add to the honey syrup and simmer gently for 8-10 mins until the plums are soft.
  3. When tender, transfer to a serving bowl using a slotted spoon.
  4. Remove the cinnamon stick, return the syrup to the heat and boil rapidly until slightly thickened. Allow to cool, then pour over the plums.
  5. Serve with a dollop of half-fat creme fraiche.
