Lime and honey mango

Mango with lime and honey

This exotic fruit salad can be used as a dessert or for breakfast, to get your day off to a nutrient-packed start

  • Serves: 4

Ingredients

  • 1 large papaya
  • 1 large mango
  • 2 limes
  • 1tbsp clear honey
  • 60g (2 oz) flaked toasted almonds

Method

  1. Cut the papaya in half, remove the seeds and peel. Cut the flesh into cubes.
  2. Slice through the mango either side of the stone. Peel, then cut the flesh into cubes.
  3. Place the fruit in a serving bowl.
  4. Finely grate the rind from the limes and add to the fruit. Squeeze the juice then put in a small saucepan with the acacia honey. Heat gently, stirring, just until the honey has dissolved. Allow to cool.
  5. Pour the cooled lime juice over the fruit and toss well. Sprinkle over the flaked toasted almonds and serve
