Lime and honey mango

This exotic fruit salad can be used as a dessert or for breakfast, to get your day off to a nutrient-packed start

Serves: 4
Ingredients
- 1 large papaya
- 1 large mango
- 2 limes
- 1tbsp clear honey
- 60g (2 oz) flaked toasted almonds
Method
- Cut the papaya in half, remove the seeds and peel. Cut the flesh into cubes.
- Slice through the mango either side of the stone. Peel, then cut the flesh into cubes.
- Place the fruit in a serving bowl.
- Finely grate the rind from the limes and add to the fruit. Squeeze the juice then put in a small saucepan with the acacia honey. Heat gently, stirring, just until the honey has dissolved. Allow to cool.
- Pour the cooled lime juice over the fruit and toss well. Sprinkle over the flaked toasted almonds and serve
