Ingredients
- Turkey breast steaks, dried sage and cranberry sauce give these baked potatoes a really festive flavour. You can fry or grill 4 rashers of bacon with the turkey and serve these chopped on the jackets. Or for a special treat slice 120g (4oz) brie, lay the slices on top of the turkey, and pop the jackets under a hot grill for 5 mins to melt the cheese. Serve with leftover Christmas day vegetables or some cooked frozen mixed veg for extra vitamins.4 medium size potatoes (175g-225g/6-8oz each) You can use: Cara, Marfona, Estima
- 4 turkey breast steaks
- Dried sage
- Cranberry sauce
Method
- Scrub the potatoes, then dry and prick each one several times with a sharp knife or a cake tester.
- If you're using a microwave: Cook one potato (225g/8oz) for 6 mins on full power (800W), turn halfway through cooking. Allow to stand for 1-2 mins before serving. If cooking more than one potato at a time you need to increase the cooking time accordingly.
- If you're using the oven: Pre-heat the oven to 200°C/400°F/gas Rub a few drops of olive oil and a little salt into the potato skin, put them in the oven on a baking tray and bake for 1 1/4 hrs or until soft.
- When the potato is almost ready, fry the turkey breast steaks for about 4 mins each side in a non-stick pan with a good pinch of sage. When they are cooked through remove from the pan and set aside until your potatoes are ready.
- Slice the turkey into strips and serve on top of the jacket potatoes with a good spoonful of cranberry sauce.
