Sticky molasses ribs

A delicious family treat - pork ribs with a superb sticky barbecue flavour. Baked in the oven these make a delicious family treat and are always a great hit with the kids.

Ingredients
Top tipsInstead of Bourbon use apple juice for an alcohol free version.
- 3 garlic cloves, crushed
- 2cm piece root ginger, peeled and minced
- 3tbsp Blackstrap Molasses
- 1tsp Dijon mustard
- 125ml (4 1/2floz) Tomato Ketchup
- 1tbsp Honey Apple Cider vinegar
- 1tbsp fresh rosemary, chopped
- 1tsp smoked paprika
- 3tbsp Bourbon or whisky
- 1 - 1.5kg (2lb 3oz - 3lb 5oz) pork spare ribs
Method
- Place all the ingredients into a large freezer bag or shallow dish and mix well. Seal the bag and place it on a dish so that it can lie flat. Place in the fridge and marinate overnight.
- Preheat the oven to 180ºC/350ºF/gas 4.
- Remove the ribs from the bag or dish and place in a roasting tin lined with Teflon or foil. Cover loosely with foil and place in the oven for 40-50 mins until the ribs are sticky and golden brown. Turn halfway through cooking. Heat any remaining marinade and simmer for 5 mins to create a sticky sauce.
- Place the sticky ribs on a large platter and accompany with any remaining sauce.
