A delicious family treat - pork ribs with a superb sticky barbecue flavour. Baked in the oven these make a delicious family treat and are always a great hit with the kids.

Ingredients

Top tipsInstead of Bourbon use apple juice for an alcohol free version.

  • 3 garlic cloves, crushed
  • 2cm piece root ginger, peeled and minced
  • 3tbsp Blackstrap Molasses
  • 1tsp Dijon mustard
  • 125ml (4 1/2floz) Tomato Ketchup
  • 1tbsp Honey Apple Cider vinegar
  • 1tbsp fresh rosemary, chopped
  • 1tsp smoked paprika
  • 3tbsp Bourbon or whisky
  • 1 - 1.5kg (2lb 3oz - 3lb 5oz) pork spare ribs

Method

  1. Place all the ingredients into a large freezer bag or shallow dish and mix well. Seal the bag and place it on a dish so that it can lie flat. Place in the fridge and marinate overnight.
  2. Preheat the oven to 180ºC/350ºF/gas 4.
  3. Remove the ribs from the bag or dish and place in a roasting tin lined with Teflon or foil. Cover loosely with foil and place in the oven for 40-50 mins until the ribs are sticky and golden brown. Turn halfway through cooking. Heat any remaining marinade and simmer for 5 mins to create a sticky sauce.
  4. Place the sticky ribs on a large platter and accompany with any remaining sauce.
