There's nothing like an easy to make homemade apple pie - serve with custard or ice cream for a wholesome and tasty pudding. Better than buying it from a shop.

Ingredients

Apples are seasonable from August to March, but become flavourless after February. Many things are suggested for the flavouring of apple pie

225g (8oz) PastryApples - allow 225g (2lbs) of apples for a pie for 6 personsTo every 450g (1lb) unpeeled apples allow:

  • 50g (2oz) moist sugar (soft brown sugar)
  • 1tbsp Lemon Juice
  • 1egg white
  • 1/2tsp lemon peel, finely minced
  • Caster sugar
  • Icing (optional)

To Serve:

  • Rum and raisin ice cream

Method

  1. Peel, core and slice the apples.
  2. Put into a deep pie dish, just capable of holding them, with the sugar, placing a small cup upside down in the middle of them.
  3. Place a border of pastry around the edge of the dish. Cover with pastry and ornament as desired. Bake at 190ºC/375ºF/gas 5 for 30 mins.
  4. Remove from the oven. Brush the pie with lightly whisked egg white, sprinkle with some caster sugar and a few drops of water.
  5. Put the pie back into the oven and finish baking for 10 - 15 mins and being careful that it does not catch or burn, which it is very liable to do after the crust is iced.
  6. If made with a plain crust, the icing may be omitted.
  7. Serve with two scoops of rum and raisin ice cream
