Want to turn your boring, overcooked, ugly-sister sprouts into a stunning, sexy Cinderella star of the roast dinner? Try this recipe.. loads of spices, chillis and fresh herbs give quickly-cooked sprouts a wickedly hot kick
Ingredients
- 500g (18oz) brussels sprouts
- 50g (2oz) ginger paste
- 50g (2oz) garlic paste
- 50g (2oz) red chilli powder
- 2 1/2tsp turmeric powder
- 40g (1 1/2oz) cumin powder
- 40g (1 1/2oz) coriander powder
- 20g (3/4oz) red chilli (whole)
- 30g (1 1/4oz) green chilli (chopped)
- 20g (3/4oz) coriander (chopped)
- 300g (11oz) tomatoes (puréed)
- 100ml (3/1/2 floz) oil
- Salt
Method
- Blanch the brussels sprouts and set aside.
- Add the whole red chillies, ginger, garlic, powdered spices and puréed tomatoes to an oiled pan and cook till you get a thick sauce.
- Add the green chillies and the chopped coriander.
- Simmer and add the Brussels sprouts.
