Ingredients

  • 500g (18oz) brussels sprouts
  • 50g (2oz) ginger paste
  • 50g (2oz) garlic paste
  • 50g (2oz) red chilli powder
  • 2 1/2tsp turmeric powder
  • 40g (1 1/2oz) cumin powder
  • 40g (1 1/2oz) coriander powder
  • 20g (3/4oz) red chilli (whole)
  • 30g (1 1/4oz) green chilli (chopped)
  • 20g (3/4oz) coriander (chopped)
  • 300g (11oz) tomatoes (puréed)
  • 100ml (3/1/2 floz) oil
  • Salt

Method

  1. Blanch the brussels sprouts and set aside.
  2. Add the whole red chillies, ginger, garlic, powdered spices and puréed tomatoes to an oiled pan and cook till you get a thick sauce.
  3. Add the green chillies and the chopped coriander.
  4. Simmer and add the Brussels sprouts.
