This is a quick and easy way to spice up your roast potatoes. The hot, sweet, crunchy roast potatoes give Christmas dinner a delicious new twist, but you could serve them with any meal that needs a bit of a lift.

Ingredients

  • 1kg (2 1/4lb) baby potatoes (peeled)
  • 40g (1 1/2oz) cumin seeds
  • 2 sprigs curry leaves
  • 30g (1 1/4oz) crushed black pepper
  • 50g (2oz) red chilli powder
  • 40g (1 1/2oz) turmeric powder
  • 60g (2 1/4oz) cumin powder
  • 40g (1 1/2oz) coriander powder
  • 30g (1 1/4oz) chopped coriander leaves
  • 100ml (3 1/3floz) oil
  • Salt

Method

  1. Heat the cumin seeds in an oiled pan and add curry leaves and powdered spices.
  2. Add the spice mixture to the potatoes, place on a roasting pan and cook in a preheated oven for 30 mins at 180°C/350°F/gas 4.
  3. Once cooked, garnish with coriander leaves.
