The new healthy variety of potato called Phureja, roasts quickly with a little oil and is naturally buttery so extra butter isn't needed for perfect roasties

  • Cooking time: 35 - 45 mins

Ingredients

  • 2kg (4 1/2lb) Phureja potatoes (available from Sainsbury's)
  • Pinch of sea salt
  • Dash of oil

Method

  1. For the best roast potatoes, cut phurejas into chunks (or wedges) and blanch in boiling water for 2-3 minutes.
  2. Shake the chunks gently in a colander to roughen the surfaces.
  3. Place the chunks in a roasting tin with oil, shake on some sea salt and roast in an oven at 220°C for 30-40 minutes until golden and crispy.

Guideline Daily Amount for 2,000 calories per day are: 70g fat, 20g saturated fat, 90g sugar, 6g salt.
