What's a Christmas buffet without a cream cheese dip to dip in all your nibbles? This is such a quick and easy recipe so why not give it a try?

Ingredients

Crispy shallots can be stored in an air-tight container for 2 weeks They can be used sprinkled on salads Use as a garnish for Asian-style dishes or soups You could add freshly chopped chives, to this dip www.ukshallot.com

  • 30g deep fried crispy shallots
  • 200g cream cheese
  • 2tbsp crème fraiche
  • 1tbsp lemon juice
  • Sea salt and black pepper

Method

  1. To make deep fried crispy shallots: peel the shallots. This is easier if you first soak the shallots in warm water for 10 mins, then peel. Then very finely cut the shallots into rings, and fry in batches in hot veg oil until crispy and golden brown, drain well on kitchen paper, then use.
  2. Mix all the ingredients together and top with crispy shallots. Serve with vegetables - carrots cut into batons, peppers, courgette, broccoli etc.
