For roast chicken with a healthy twist, why not have a go at this recipe using oranges and antioxidant rich tea. It serves two so try it for a romantic dinner.

Ingredients

  • 2 chicken breasts (with skin)
  • 1 orange - grated rind and juice
  • 2 Ceylon teabags
  • 200ml dry white wine
  • 1tbsp sugar
  • 30ml clear honey
  • 1tbsp cornflour diluted
  • 30ml olive oil
  • Salt and ground pepper to taste

Method

  1. Combine the stuffing ingredients in a bowl, carefully slice each chicken breast lengthways, stuff and set aside.
  2. Warm half of the wine in a small pan, add the tea bags and infuse for 5 mins.
  3. Strain the wine and combine the orange juice and rind, bee's honey, sugar. Brush liberally over the chicken, coating in thoroughly.
  4. Place the marinated chicken in the fridge for 3-4 hrs. Brush with olive oil and roast in medium to hot oven till done.
  5. Remove the chicken and strain the remaining liquid into the pan.
  6. Reduce the balance white wine and add to the liquid. Bring to boil and slightly thicken with diluted cornstarch.
  7. Season to taste and serve with the chicken and seasonal vegetables.
