  • 90g butter
  • 75g flour
  • 1 tbsp English mustard
  • A pinch of salt and ground pepper

You can freeze your turkey and ham pie. Simply cook it and allow it to cool. Then freeze for up to 3 months. Allow to defrost fully before re-heating

  1. Preheat the oven to 220C/425F/gas 7.
  2. Melt the butter in a heavy based pan and add the onions, carrots and celery and cook for 5 minutes.
  3. Add the flour off the heat. Whisk in the chicken stock and cook over a medium heat, stirring all the time until the sauce is smooth. Season well and add the mustard.
  4. Place the chicken pieces, ham and leeks in the bottom of an oval pie dish, sprinkle with the fresh parsley and pour over the sauce.
  5. Roll out the pastry on a lightly floured surface and cover the pie dish with the pastry.
  6. Brush the top of the pastry with a little beaten egg and bake in the oven for 20-25 mins. After this time reduce the heat to 180C/350F/gas 4 and bake for a further 15 mins.

The flour measurements don't make sense. I only need to add flour once but in the ingredients list it mentions 25g and 75 g of flour. Should one of these not be there, or should it be 100g? Thanks

I made up my own chicken, ham and leek pie last night and it was really lovely. A bit different to the usual kind, with potato inside. Check it out on my blog, recipes at random, at

Hi Philip, thanks for pointing this out. We have changed to recipe to include onions and celery in step 2. Let us know how you get on. Jolene

What about the onion and the Celery, when is this added?

haha just made this... took me an hour (complete beginner!) i edited things slightly using instead what i had in the fridge, spinach, red onion, red pepper, chicken and bacon. then added a tiny bit of curry powder to it. Blimming Gorgeous!!! i feel like a woman now i can make a good pie!! :)

Love this but use less leeks and no celery also sometimes use puff pastry instead.
