This quick starter of scallops and asparagus looks as impressive as it tastes and is ideal for romantic meals and dinner parties

Ingredients

  • 200g (7oz) asparagus tips
  • 20 fresh scallops
  • 2tbsp olive oil

Method

  1. Heat a frying pan with 1tbsp olive oil. Add the asparagus, season with sea salt and black pepper, and fry for 3-4 mins, until the asparagus is just cooked. Remove from the pan and keep warm.
  2. Return the pan to the heat and add 1tbsp of olive oil, making sure the pan and the oil are very hot but not smoking. Pat the scallops dry with kitchen paper, season with sea salt and add them to the hot pan.
  3. Cook for 45 seconds on each side and remove from the pan.
  4. Divide the asparagus tips between four serving plates and place the scallops on top.
