This is a hearty soup, with delicious sweet flavours. Great for those sick days, or when you just need cheering up

Ingredients

  • 1 medium onion
  • 2tbsp olive oil
  • 2 cloves garlic
  • 1/2 leek
  • 2tbsp freshly grated ginger
  • 1/4tsp chilli flakes
  • 150g (2.25oz) curly kale chopped
  • 2 sweet potatoes diced
  • 100g (3.5oz) pearl barley (you'll find it in the supermarket with the rice)
  • 473ml (1pt) of vegetable stock
  • 1tbsp parsley
  • salt and pepper to taste

Method

  1. Finely chop the leek, onions and garlic and fry in a medium-sized saucepan with the olive oil.
  2. Cook for 5 mins so the vegetables are soft but not browned.
  3. Next add the ginger, chilli, sweet potato and stock, bring to a steady simmer for 10 mins.
  4. Add the barley to the pan and cook for a further 15 mins stirring every so often.
  5. Finally add the kale and parsley continue cooking for 3-4 mins, season to taste and serve.

Guideline Daily Amount for 2,000 calories per day are: 70g fat, 20g saturated fat, 90g sugar, 6g salt.
