Pasta shells with creamy kale sauce

This creamy pasta dish is a delicious alternative to carbonara and a great way to get some green veg into your diet

Ingredients

  • 3 rashers of streaky bacon finely chopped
  • 1 hard-boiled egg grated
  • 1tbsp chopped rocket
  • 100g course bread crumbs
  • 1tbsp olive oil
  • 650g (23oz) pasta shells
  • 200g (7oz) finely chopped kale
  • 50g (1.7oz) butter
  • 4 garlic cloves sliced
  • 100ml (0.2pt) white wine
  • 3-4tbsp crème fraiche
  • 1tsp oregano chopped

Method

  1. Gently fry the bacon and breadcrumbs in olive until crispy then cool before mixing in the grated egg and parsley.
  2. Boil a large pan of salted water and cook the pasta according to packet instructions and drain.
  3. Meanwhile heat the butter and garlic in a frying pan cook for 1 min then add the kale and continue cooking for 2 mins.
  4. Pour in the white wine, cream and oregano bring to the boil season and stir in the pasta
  5. Transfer to a serving plate and sprinkle bacon and breadcrumb mix over the top and serve with freshly grated Parmesan cheese.
