This could be improved with some stir fry veg - adding different coloured veg not only looks great but helps to provide a variety of vitamins and minerals. The chicken breast provides a good amount of protein which is needed for growth, maintenance and repair for adults and children alike. It's also low in fat.
Some alternatives:
1. Try wholemeal penne pasta. While this cooks, stir-fry a colourful vegetable selection and add tomato puree concentrate. Then add the drained pasta shapes, a sprinkling of parmesan cheese and a handful of pine nuts (toasted) and it'll be delicious.
2. Using wholemeal pasta again, drain and throw in some smoked salmon trimmings and 2tbs half-fat crème fraiche, mix well and serve with green salad.
3. Other vegetarian meals can be avocado, sliced with walnuts, added to a salad and served with jacket potato. Or vegetable curry or chilli, using wholemeal rice.
4. Pan-fry chicken breast and add some half-fat crème fraiche and a little tarragon. Serve on mashed sweet potato or parsnip with some greens.
