Perfect for Saturday or Sunday brunch, these pancakes are delicious with the combination of salty bacon and sweet maple syrup

Ingredients

  • 8-12 rashers lean Maple Cure back bacon
  • 100g/4oz plain flour
  • 1 egg
  • 125ml /1/4pt milk
  • 5ml/1tsp oil
  • Maple syrup

Method

  1. Make batter for pancakes - Place flour in bowl. Make well in centre of flour and add egg. Beat egg and slowly add flour. Add milk gradually until flour, egg and milk have combined into a smooth thick batter.
  2. Grill rashers of bacon for about 2-4 mins under a hot preheated grill.
  3. To make pancakes - Heat oil in a non-stick pan. When hot, tip out any residue oil. Add 4 large spoonfuls of batter, allow to set and brown on one side before carefully turning. Repeat using all batter.
  4. Serve pancakes stacked with crispy bacon rashers and liberally pour over maple syrup.
